When I was in SLC last November doing research I also took time to take 
a tour of the square. As a non-Mormon I was not allowed into the Church.

Perhaps that is why there is a confusion about volunteers must be a 
Mormon, or not. As stated many non-Mormons are volunteers, but to be 
allowed into the Church sanctuary you must be a Mormon.

You're referring to the Salt Lake Temple, which only the worthy LDS are 
allowed to enter with required recommends. The Temples are only ones not 
open to public, except prior to dedicatory events. The Temples are not 
same as the churches.

The local churches (wards and branches) are open to public including you.

The FHL (the LIBRARY) is only one where the LDS are only ones working 
and they have to meet SAME requirements when they go to the TEMPLES.

The Family History Centers - which are satellites of the Family History 
Library are ones non-LDS can volunteer.

BTW, the definition of the church in regard to the LDS Church, there is 
only one Church. The local congregations of the LDS Church are never 
properly referred to as local churches. Rather they're referred as Wards 
and Branches.
