"late" does not always mean deceased, though it often does. In some case
it would mean previous or before (this time).
In your example: 
Norfolk, Depwade District, Bunwell, Burials (Bishops's Transcript), 1812
COOPER, Alice, age 22, wife of John, late FLEET

It would indicate to me that Alice COOPER's previous name was FLEET. In
some cases it could be a previous marriage, but due to her age I would be
looking to see if FLEET is her maiden name.
