  An Irish Tenor
  
      Happy St. Patrick¡¯s Day! I have always loved St. Patrick¡¯s Day it is one of my favorite Holidays. I wrote a book about my Irish relatives ¡°MEET THE HALLADAYS.¡± My mother¡¯s maiden name was HAZEL HOLLADAY/HOLLIDAY. Mom got her Scotch Irish blood from the HOLLADAY¡¯S.
   
  I do not known how many people remember ¡°THE JACK BENNY SHOW¡± on the radio in the 1940¡¯s. There was a young Irish Tenor by the name of ¡°DENNIS DAY¡± and he sang all of the old favored Irish songs O Danny Boy¡±, ¡°Toora Loora Looral,¡± ¡°My Wild Irish Rose,¡± ¡°Darling Girl from Clare,¡±¡±It¡¯s A Long Way To Tipperary,¡± ¡°Red Is The Rose,¡± ¡°I¡¯ll Take You Home Again Kathleen,¡± ¡°Will You Go Lassie Go,¡±When Irish Eyes Are Smiling,¡± ¡°¡±I hear you calling me,¡± and ¡°By The Short Cut To The Rosses.¡±
   
  There have been many famous Irish Tenor down through the years PATRICK MULHERN, LOUIS BROWNE, JOHN McDERMOTT and JOHN McCormack.

  Of course St. Patrick¡¯s Day would not be St. Patrick Day with out CORN BEEF and Cabbage, carrots and potatoes. (Irish Potatoes.) 
   
   
   
  Paul Odle Corned Beef Recipe
   
  You can buy a corn beef Brisket already prepared. I get out my big Turkey Roasting pan. I place the Corn Beef with all its seasoning packets in the roaster pan.
  Place enough water in the roasting pan to equal two inches.
  1. Chop one bid white onion put on top of Corn Beef
  2. Peel as many potatoes and carots as you want, quarter the potatoes add to Turkey roaster. 
  3. Take one big head of cabbage cut in fourths and add to Turkey Roasting pan 
  4. Place Roaster Lid on top of Roaster
  5. Place Turkey Roaster in 350-degree pre-heated oven for two hours. 
  Paul Odle Mustard Sauce Recipe
  Mix together in Blender
  &frac14; D-Jon¡¯s Mustard
  &frac14; Cup Mustard
  &frac14; Cup of Cremed Horse radish
  1-Cup Heavy Whipped Whipping Cream
  For Dessert you will want to serve IRISH SODA BREAD
   
  IRISH SODA BREAD 
  

  A traditional Irish-inspired round quick bread made with buttermilk and currants or raisins.

          Preparation 
    15 min. 
      Baking 
    30 min. 
   
  Ingredients:
      2 1/2 cups all-purpose flour 
  3 tablespoons sugar 
  2 teaspoons baking powder 
  1 teaspoon baking soda 
  1/2 teaspoon salt 
  1/3 cup cold LAND O LAKES&reg; Butter 
  1 1/4 cups buttermilk* 
  1/2 cup currants or raisins 
  
Instructions:

Heat oven to 375¡ãF. Combine all ingredients except buttermilk and currants in large bowl; cut in butter until mixture resembles coarse crumbs. Stir in buttermilk and currants just until moistened.

Turn dough onto lightly floured surface; knead gently 10 times. Shape into ball. Place onto greased baking sheet. Pat into 6-inch circle. Cut 1/2-inch deep “X?in top of dough with sharp knife.

BBake for 30 to 35 minutes or until golden brown. Serve warm.

*Substitute 4 teaspoons vinegar or lemon juice plus enough milk to equal 1 1/4 cups. Let stand 10 minutes.
