I think reader George has given you a better answer than I could. These coats of arms that many of us have
came from some relatives who had big aspirations.  Or, some non-relatives with the same surname.

There is a company -- the name of which I forget -- that used to sell "family books" and "coats-of-arms"
that were, to put it one way, made out of whole cloth.

Now, there are websites that will do the same thing. Just now, I Googled "scheffler coat of arms" and came
up with 1900 or so entries. 

But, if you want to learn about the heraldic process, here is a place to look:
